Almond Apple Banana Smoothie.

First off, happy 2013! The old has gone, and the new come.

I believe everyone has had their fair share of highlights in the past year — and while we remember the good, let’s also forget the bad (learn from them, too) then look forward to better things 🙂

I haven’t been able to keep up with the blog in the past few months. Changes will come but possibly slower than expected; yet it’s all about taking things one at a time! I’m just happy to have all of you with me on this journey.

Today being 1st January, I thought I’d start off the new year with something simple and healthy to share. And these two are also part of the goals I had set for myself when I first started sharing. It’s nice, then, to remind myself and to have things go full circle.

Apple Crumb Cake

Almost more than half gobbled up, so soon!

It’s my second attempt at this cake.

The first time it was only half-baked. That was bad, though somewhat still edible. (Or maybe I shouldn’t have eaten it? Ha ha.) But I blame my oven at home. It’s not much of a baking oven.

Credit for today’s success goes to my grandmother’s oven. And what a difference it makes, as I’ve learned!

It’s actually a cake now! Sugary crusty streusel topping, soft cakey insides and large sweet apple chunks. Yum yum.

It’s not yet perfect, but I dare say dangerously close.

Brown Sugar Apple Cheesecake

I love cheesecake. And I love apples. So, two weeks earlier, I thought I’d try my hand at baking an apple cheesecake!

And, what better way than to look up some easy cheesecake recipes on Joy the Baker! She’s one of my favourite food bloggers and I absolute adore her work ♥

Apples are such a versatile fruit to work with when it comes to baking, and even cooking for some. I love all kinds of apples: the sweet ones, the crunchy ones, even the sometimes soft ones! The health benefits, of course, are but an added bonus 😉 And as for cheesecake… It’s no secret: I absolutely have no willpower when it comes to resisting them.

The recipe I used is adapted from the one on Joy’s site, so it’s similar but does not follow it strictly.

Overall the taste was pretty good, not too sweet and not too bland. I especially loved the caramelized apples on top! The only downside would have to be the crust; in all my previous baking efforts I’ve always had problems with the crust. I’ve yet to perfect it 😦 But I’m still learning!
